A new recipe

I'm not anti-food but I haven't felt like cooking lately. Easter candy kind of threw off the food budget this week so I have to be creative.

M-Apple puff pancake (aka German pancakes with thinly sliced, peeled apples, use granny smith if you have them or another tart apple, and cinnamon)
T*-Veggie burgers with homemade buns and sweet potato chips
W-hot dogs with home made buns and smoothies (no spinach, which we love, but I do have mint which is great with pineapple and apples)
T-Rice and Roasted Chicken
F-dinner out--Kids get grilled cheese
S-Eggs in some form
S-Something tasty, maybe sweet and sour meatballs with veggies and rice

*So the kids didn't really like the burgers but they were a little dry and I didn't give them ketchup and mustard! We'll try again. I also topped the burgers with grated carrots, slice pickles, sauted mushrooms and zuchini. Super tasty. Oh and mozzarella. The seasoning was good, I don't think I added enough salt (too lazy to measure!) I think Tzatziki would be awesome on this. I just found a recipe for Edamae burgers. I'll have to try that one next.

The chips didn't crisp up as much as I wanted them too but they tasted good and the kids did like these. Less pepper though.

Cynthia, your hamburger buns look awesome. I noticed you said homemade hot-dog buns on another post. Is it hard? Do they freeze well?

They were a little tough. They needed to be softer. I may try again but it was out of necessity and didn't turn out as well as I had hoped but the hamburger buns were good and tasty. Just make a very soft dough.
