The question of the day at my house. What you fixing for dinner Mommy? After the tree fell on our house, I pretty much got busy doing house stuff. So menu planning went down the drain. But I still manage to fix meal every night. My hubby is still doing his Gluten Free diet. I don't mind it now, the kids and I are still eating our normal food and he just eat stuff that are Gluten Free. Menu planning helps me sometime, but I enjoy cooking without planning. I just open pantry, the fridge and freezer and I am able to cook healthy meal. I been cooking a lot of Filipino meals that are Gluten Free such as pancit by using rice noodles, adobo and etc...
For our Utah friends, I thought I would put pictures of Spring here in Nashville.


Menu for April 6 - April 13
Monday---- Chicken in a Pot with Veggies
Tuesday--- Beef Stragonoff (Gluten Free noodles)
Wednesday--- Chicken Enchilada(Made with Corn Tortillas)
Thursday ----Spinach Ravioli with spaghetti sauce
Friday ----Lumpia and Adobo
Saturday ----Left over(Every man for himself)
Sunday --- Easter Dinner ( Ham and the fixins) Friends over for dinner
